Celeriac & Potato Soup Recipe Slow Cooker
Egg free, dairy free, soya free, wheat free & gluten free.
I’ve recently started doing my online food shopping with a company called Abel & Cole because I want to eat more organic fresh food. I get the seasonal organic fruit and veg box delivered once a week, which means I get different vegetables each week. I am absolutely loving the variation and trying out new recipes. This week I got celeriac and to be honest I have never eaten celeriac before nor did I know what it was. If like me you don’t know what it is, it comes from the celery family and is best peeled using a sharp knife.
As I am feeling a bit run down at the moment, I thought a nice warm hearty soup would be ideal. Having never eaten celeriac before I literally made this recipe up, threw it all in my slow cooker and hoped for the best. Lucky for me it turned out to be so delicious!! My son isn’t well at the moment either as he is reacting to a food so he’s not been eating and just wanting his almond milk but he tried this soup and he loved it! So much so he asked for more, now one very tired and worried mummy will sleep tonight knowing he has eaten.
Anyway here’s the recipe, I hope you enjoy it as much as we did!
4 large baking potatoes
1 1/2 litres of vegetable stock
1 teaspoon of parsley
1 teaspoon of garlic powder
1 teaspoon of pepper
1. Peel and chop potatoes and celeriac and place in the slow cooker.
2. Pour in vegetable stock, mix in pepper, garlic and parsley.
3. Cook on medium heat for 6 hours.
I use Kallo organic vegetable stock cubes which are dairy/lactose and gluten free.
You could also make this soup on the hob, it’s ready once the potatoes and celeriac are soft.
Adjust the pepper amount to your taste.
