Chicken & Bacon Slow Cooker Stew Recipe
I’ve been experimenting with my slow cooker again and when I say experimenting I mean, I throw random things out of my fridge and spice cupboard into it and cook on medium for 6 hours then hope for the best. I’ve always just thrown random foods together to see what happens, I love creating new meals in the kitchen. The hardest part now is remembering to measure the quantities and write them down so I can share the recipe with you all. My son is really fussy so he’s my new judge, if he likes it then I know it’s good enough for the blog. He ate two bowls of this stew tonight with crusty baked bread rolls, so I know it’s good enough to share. This is the first time he’s eaten courgettes too, he usually refuses or spits them back out.
This recipe is dairy free, soya free, egg free, wheat free and gluten free.
3 rashers of streaky bacon
2 chicken breasts diced
1 large onion
600ml chicken stock
1 teaspoon dried parsley
1 teaspoon garlic salt powder
1 teaspoon ground black pepper
2 tablespoon red currant jelly
1. Place all of the ingredients into the slow cooker and cook on medium for 6 hours.
