Free From Recipes – Quick & Easy Free From Meal Idea
Dairy Free, Soya Free, Wheat Free & Egg Free
Roast chicken, roast potatoes and roasted vegetables… Ok so it’s not difficult to cook anyway but this post is for the busy parents like myself, who just don’t have enough hours in the day as it is without spending ages peeling and chopping veg. I tend to make a lot of our main meals in the slow cooker as it saves so much time but my mum found the following for us in Tesco and it was great to be able to pop it all straight into the oven and continue playing with my son. After 45 minutes we had a lovely meal on the table – no effort and hardly anytime at all in the kitchen!
I followed the cooking guidelines on the packaging and once cooked, I drizzled in olive oil and topped with sliced avocado. I love avocado and I add it to whatever meals I can, it’s a great healthy high fat food. I first started enjoying avocados when I was living in Australia in 2010, they definitely taste better in Australia and New Zealand (I lived in NZ in 2012) than they do in the UK but I still eat them regularly over here. My son isn’t a fan of eating avocado on it’s own yet but I make him a chocolate avocado mousse to get it into his diet, I did sneak some onto his plate with this meal too but he caught me out – nothing gets past this kid !
So there you have it, pop in Tesco for the ingredients, pop them all in the oven (at different stages) and after 45mins you’ll have a delicious roasted meal all dairy free, soya free, wheat free & egg free.
