Potato & Red Onion Stew Recipe
Dairy free, soya free, wheat free, gluten free, egg free.
This is a very simple potato stew recipe, I am sharing it as it’s one of my son’s favourite meals and it’s so easy to make. Even though it’s the 1st June today, it still feels like winter to me, it’s so cold and hasn’t stopped raining for days. I always enjoy this stew best on days like today when it’s so cold outside. 1kg baking potatoes (peeled and chopped into chunks)
4 red onions sliced
400ml vegetable stock (I use these stock cubes as they are dairy, soya & gluten free)
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon basil
1. Place all ingredients in a large pot and cook on medium heat on the hob for around 20 minutes or until the potatoes are soft.
This potato stew recipe could also be made using a slow cooker, just add all of the ingredients and cook on low heat until the potatoes are soft.
