Sausage Casserole – Slow Cooker Recipe
When catering for those with food allergies, it’s easy to get stuck into a routine of serving up the same allergy safe foods over and over again. People regularly contact me asking for meal ideas, so I want to share my sausage casserole recipe with you all. It’s a regular in my house because it’s very easy to make and it tastes so delicious. I use a slow cooker so I can throw all of the ingredients in, in the morning and carry on with my busy day while it cooks. I absolutely love my slow cooker, I make a lot of our evening meals in it as it saves me so much time.
690g passata or chopped tomatoes
300ml vegetable stock (I use these stock cubes)
2 teaspoons garlic powder
2 teaspoons thyme
2 teaspoons basil
2 teaspoons oregano
2 teaspoons onion powder
2 teaspoons black pepper
4 broccoli florets (fresh or frozen)
A handful of chopped carrots (fresh or frozen)
4 sausages – I use these sausages from Sainsbury’s as they are dairy, soya and wheat free.
1. Place all of the ingredients in the slow cooker and cook on medium for 6 hours.
2. Serve with dairy free mash and enjoy!
Notes about this recipe:
I use frozen veg and put it into the slow cooker from frozen but you can use fresh vegetables.
You can add any vegetables you desire.
If you have fresh onions and garlic then you can use fresh, rather than the powder forms.
You can cook the sausages before adding them to the slow cooker if you prefer, by following the cooking instructions on the packaging.
